2025 also marks the arrival of a new culinary figure: chef Filipe Silvestre signs at Le Montaigu with a very nuanced score, pairing Atlantic coast produce with vegetables from the permaculture garden to be savored in a contemporary chic setting, with a sublime lake view reflecting the château.
